Honey-Garlic Slow Cooker Chicken Thighs

We had this yummy chicken at a friend’s house and since then it’s been a favorite. It’s so darn delicious! AND it takes a grand total of 3 minutes to prepare. Sunday is the day I utilize my SLOW COOKER. I let that amazing little invention do my dirty work and I open it at dinner time and enjoy.

So Sunday morning before church I spent a whopping 3 minutes throwing the following into my slow cooker:

(The recipe calls for 4 chicken thighs but I find that a lot of the chicken thighs at Whole Foods/Trader Joes come in packs of six. There’s plenty of sauce for the extra two pieces! Also, sometimes I use 12 chicken thighs – double the sauce – and then we have delicious leftovers.)

I throw the chicken in the crock pot and tenderize with a fork real quick. I combine the rest of the ingredients in a bowl, whisk together and pour right over the thighs. I cover. Turn on low. Make a mental note in my head of the time and come back to EAT IT five hours later.

After church Brielle was tired and cranky so a nap was in order… She ended up sleeping the afternoon away and we missed a little friend’s birthday party. Yes, I made the executive decision of letting her sleep through a party. It felt like a really good idea at the time… Until she woke up and was excited about getting dressed for a birthday party that had started an hour ago! MOM GUILT CITY!

So we all piled in the car to have a walk on the beautiful downtown mall. AKA: Get my girl a consolation prize ASAP! Which in her vernacular means a “TREAT.”

It’s amazing how beautiful the Downtown Mall in Charlottesville is, even when it’s bare and cold.

We drew on the chalk wall (I wish I had a picture of this very cool wall!) and got Brielle a cupcake from Sweethaus. It’s our favorite place in town for all things sweet.

We LOVED their location in Brooklyn too! I think this is my favorite picture of all time.

*To split hairs (or “chop hairs” as we say in this house,) Brielle can have COOKED dairy, just not raw. So I got her a very tasty (regular version) chocolate cupcake with Vegan vanilla icing. Yum.*

With our goodies in tow we started for home. When it’s almost 5:00 and there’s sweets to be had, and everyone is tired and hungry, the CRAZINESS starts to come out. The kids just couldn’t believe we didn’t have a jet to FLY them home! I couldn’t believe it either. I don’t know what it is about THIS TIME of night but they have the insanity thing down. Needless to say, I was so happy when we opened the door and smelled DINNER. Thank you Slow Cooker!

The kids and I made some veggies to have with dinner and for the upcoming week.  We just wash wash wash, chop chop chop and then coat in EVOO and toss and cook for 20(ish) minutes at 400. Brielle LOVES broccoli as long as it’s roasted and kind of tastes like a chip. And for some reason a little Salt does just that!

I added some Buffalo Ranch Coleslaw to the plate (we had it last night) and can I tell you, it tastes even better the second day!

Michael is seriously in love with all things food. Whenever he sees me standing at the counter he pulls up a chair and says “SEEEE!”
